Chef Juan T. McAllister has spent more than three decades cooking, running kitchens, owning restaurants, and building businesses in food. From a South Carolina boyhood watching his mother and grandmothers cook, to college kitchens in San Antonio, to Rhode Island culinary school, to Atlanta vegan kitchens, to a family farm in Florence and a five pillar brand, Chef Juan’s® is what all of that experience is being poured into now.

The Road Here

Chef Juan grew up in a South Carolina family where the kitchen was the center of the house. His mother and grandmothers cooked from memory, from land, and from family history. As a military child he traveled through kitchens across the country, picking up regional flavors and technique wherever the family landed.

After high school in Texas, and at his father’s encouragement, Chef Juan traded a planned trucking career for the culinary arts. He earned his Associate of Science in Culinary Arts at St. Philip’s College in San Antonio, then worked the hotels and restaurants of the San Antonio scene through the late 1980s.

Formal training took him to Johnson & Wales University in Rhode Island for a bachelor’s degree, then to Atlanta, where the 1990s food scene put him on the line at one of the city’s prominent vegan restaurants. That kitchen shaped what would become his signature cooking philosophy: chaunk healthy fusion cooking, a plate that treats vegetables, proteins, and dietary needs with equal respect and pulls flavor from wherever it lives.

Chaunk Healthy-Fusion Cooking

Chef Juan’s® cooking philosophy pulls from Southern roots, global technique, and years of cooking for vegans, vegetarians, allergy sensitive households, and macro tracked athletes alongside meat forward menus. Nothing is treated as a lesser plate. A vegan dinner gets the same attention to seasoning, texture, and finish as a plated wedding course.

The result is menus that read as one voice, whether the plate is short rib and truffle, a family style buffet of stewed greens and cornbread, or a macro tracked lunch delivered to a household in North Georgia.

From Line Cook to Brand Owner

Chef Juan’s entrepreneurial run started with Jus’ Caterin’ Baby!! and expanded into franchise ownership in 2018. When the 2020 shutdown reshaped the industry, Chef Juan used the pause to rebuild. Chef Juan’s® is what came out the other side, a five pillar food brand where every plate carries the same chef on the line.
